Counter any dragon spell with: lightning incants, most bullet spells, any heavy attack from a curved greatsword or greatswordgreatsword, any attack from a collosal sword greatspear or colossal spear, running charge attack from spears short swords and curved swords, or just dodge with bloodhounds.

Dragon spells are high risk high reward, the risk being the wind up and your decent but not good enough poise, and the reward is big damage.

dragon spells are fun. I also don't use the breath often at all. mostly to finish off slippery opponents.

If your opponent ever manages to successfully cast a dragon breath, that is the "you are too far away/too passive" wakeup call. They have like a full second or two of windup; you should be able to interrupt them with a jumping attack on reaction.
