Take a flatbow or a longbow with you. (dmg and such doesn't matter, although a poisonous bow grip may come handy)

Gear doesnt really matter, take whatever gear you fancy.
Skills
Take these 3 skills with you:
Favorable Winds
Hunter's Shot
Poison Tip Signet (You can replace this with "Apply Poison" if you don't have "Poison Tip Signet".)
The Kill
This is how you actually kill it:

When starting the quest, walk up the hill on your right and place "Favorable Winds" next to the large pebble.











Use "Poison Tip Signet".
Shoot "Hunter's Shot" at the griffon.
Run back and wait about 10 seconds.




Now do this over and over again until the griffon is dead.
It may take a while, but this is the easiest way to kill him.
