I recommend using the grid to begin with, to learn the area in which you can click to rotate each piece. As soon as you feel comfortable with how they rotate, and the center of each piece's hexagon, turning off the grid would be wise.

This guide uses screenshots that do not show the grid - this is done on purpose to make it easier for you to see the patterns and shapes that each puzzle has. I tested multiple different combinations before creating this guide to see which is the easiest to copy from, and determined it is easiest without the grid.

If you'd like to change the colour of almost anything in the game, you can do so in Settings.
(Although I recommend keeping it on the default settings, so that it matches the images in this guide more clearly.)
