500 grams egg dough lasagne
1/2 liter of milk (3/4 if you are using thin pasta that doesn’t need blanching)
50 grams flour
100 grams butter
150 grams of freshly grated Parmigiano Reggiano
500 grams veal mince
300 fresh 100% pork sausage (skinned and crumbled)
one glass of dry white wine
two carrots (or a big one)
one celery stick
one medium sized onion
three tablespoons of concentrated tomato pure
milk
50 grams pancetta
one tablespoon olive oil
salt, pepper, one bay leaf, a pinch of freshly grated nutmeg
