The game itself is fine and do have flaw, but it just right in it own way. So I suggest you go through the vanilla first until you find something really bugging you, then look for mod. It's not Skyrim or other Be***da game that Unofficial patch kind of mandentory.
Some are good for starter like showing elemental weakness. I won't recommend overlay that show enemy HP through. It's kind of fun in MH when you try to beat monster without knowing its exact remaining HP.
For me I just using the model change like Blue Archive character :v
Other than that I using only endgame QoL that make mining/gathering spot more visible (and look better for me) and speed up gathering speed since the rare find animation took aged to finish.
Sorry for define the line, but many mod are just out right cheat and call it QoL. (Infinity item, ammo, duration, most rebalance weapon yadayada)

subtle scoutflies is required though, you're not allowed to play without it is illegal
the npc in hub mods are also good, actually makes astera hub less than useless (seliana hub is already very good but the mod puts safari npc in there too)
there are also mods to change the palico and make them more useful, dont remember exactly how much its changed though
mods that i was very excited to realise existed were ones that replace the rath's textures to make them look more like old world counterparts (colourful and with more obvious patterns), and also a separate mod to revert their roars because old rath roars were way cooler, i recommend
theres a lot of mods that change the weapon visuals, just search the nexus for what you prefer, theres probably as many if not more of these mods than even the nsfw ones and they make up 90% of my mod folder
apart from all these i also use one to change castle schrade's weather, relatively minor mod because how often are us non-masochists fighting fatalis? but it still looks way better like this imo, and if you get a fatalis retexture too (i really really like 'cyan' fatalis) it feels like a whole different fight even if you dont touch anything about the fight itself
same goes for a lot of monsters really, just changing the look of them feels like changing so much
edit: oh yeah i nearly forgot. if you played before or just want to play with friends, skip cutscene mod. press a button to skip. its crazy
As for other mods, that is up to you my guy mod the game however you like.

Also, find your .exe file and toggle compatibility options for no fullscreen optimizations, and run as admin for good measure.
Fixes the low framerate cloth and weapon physics when playing at higher fps.

great choices, i'd like the one to silence the cat, that is super annoying why have i listened to that for +-500 hrs
the one i use is the 'all npc in gathering hub'[www.nexusmods.com] - absolutely essential, and you can change the locations they stand in too, if you unpack the one file.
if you plan on playing a few 1000 hrs, this will save you dozens of hours of running around astera / seliana trying to find all the npcs to put your next hunt together.
the only one you have to wander to is the elder melder. capcom hardcoded her, she crashes the game if you try to move her.
sidenote, should finish all your main and sidequests, if you havent, dont try to advance any quests by talking to the npcs in the gathering hub, it will probably corrupt your save. talk to them at their normal locations.
there's also a weapon skin mod, which some of em also come with its own unique wpn EFX.
ngl its very satisfying seeing a creative and unique weapon model and EFX modded to some of the weapon on this game.
honestly lots of Visuals & models and other useful mod is available for Nexus MHW. its all back to u on what do u like and ur preferences on modding the game.
i think just.. stay away from the very cheaty mod like one shot, stats change, etc. i wouldn't mind if u use it for solo satisfaction or grinding, but using it in multiplayer is very very bad.
