Revert the 2.7.1+ overlay grab handling and keyboard angle

The keyboard privacy feature received a toggle with 2.8, however the overlay grabbing/keyboard spawning angle behavior did not and is objectively worse for all but standing VR.

Grabbing the dashboard and angling it now forces a shallower angle, even when it spawns facing you (looking up, it also seems to spawn somewhat lower than it used to), it is also much harder to angle it down (the angle limit forcing it to stay upright seems to have increased).
The keyboard also spawns at a shallower angle and covers the overlay grab handle partially, and when the overlay is raised it can block it completely, forcing you to reach past the keyboard to hit it or to move the keyboard.

These two issues together compound each other when sitting and raising the dashboard or lying down, both things that aren't uncommon in VRChat.
I raise or lower the dashboard when spawning it to keep the front of my view less occluded if someone is trying to get my attention while I'm in my overlay, and if I open the keyboard following that scenario I can hardly ever grab the overlay again without moving the keyboard or reaching past it, additionally the keyboard spawning angle makes it much harder to use when you're not "upright" (lying down) or when the overlay is raised.

I have stayed on the previous branch (which was on version 2.5.5 until today) to avoid these issues hoping they would get addressed, they never were, the dashboard behavior is far less intuitive than it used to be.
